Quick and dirty definitions of anime demographics:

I thought shounen was a genre not a demographic lol. Never even heard of the other 3. I actually think this is less useful than genre.
I think Frieren is best suited for people 30+, and plenty of women love the show too. I don’t think it’d be unreasonable to suggest it’s not locked into a single demographic, even if the publisher didn’t expect it. Do we still count it if the publisher was wrong? Or maybe I’m just trying to turn this label into something actually useful lol.
This survey says Frieren is about 50/50 men and women (maybe 60/40 looking at the image of the graph), and around the 45 year old mark.
