I think maybe you’re referring to the curses that can speak like Jogo and Hanami. They’re special grade curses, extremely strong, and so rare even those at the top of Jujutsu society are surprised at they’re ability to communicate. No reason is ever given for why they’re so special, other than they’re the representation of something humans feel a lot of negative energy towards.

No, I was talking about curses like Mahito, that look like humans. Most curses don’t look even near humanoid, take the Fly Heads and Dagon as examples.
I guess the easiest explanation is that he’s manifested from human malice toward other humans, so he looks like a human.
Jogo is manifested from fear of volcanic eruptions so he looks like a Volcano, etc etc
