“beginning of a peaceful day” but I thought 平和 has slightly different connotations, like to do with war and stuff. like 世界平和 is a common collocation

Really good question! That comes down to if na or no takes precedence. So either (平和な一日)のはじまり or 平和な(一日のはじまり). I have no clue to be honest. Without any argument for it I’m leaning towards the former one.
Yes, I get what you mean. I have certainly seen it in the war/peace context, but I have also heard it in the casual “peaceful day” context before, albeit more rarely maybe? One example I could find is Nichijou ep 5 at 1:12; the voice-over says “Shinonome-ke wa kyou mo heiwa de atta”.
